Gustaf Kugelberg, Henning Kvick, and John Sadler delivered a new presentation for Mountain River Venison on a recent sales trip to the Hasselbacken Restaurant in Stockholm, one of the city's most iconic restaurants.
Hasselbacken Restaurant is a famous Swedish institution located in the Cirkus area of Djurgården in Stockholm. Its connection to the hotel at Hazelliusbacken dates back to 1748. Since 2019, it has been part of the Pop House Sweden Group, preserved by the majority owners, Swedish singer Björn Ulvaeus and Conni Jonsson.
The Mountain River Venison team brought two leg fillet options to the restaurant, and the chef was immediately impressed with the quality and mellow taste of the meat. He even developed a preferred way to receive the cuts for the restaurant, which has a high volume, so pan-ready options are essential. In addition, they noted the ever-present issue of staff shortages in the restaurant industry, emphasising how the cuts would be highly beneficial in preparing meals.

The overall comment is that the venison is so nice. It has a pleasant taste and is also very mellow. And so most guests like it.
When cooking sous vide using their process, you put it in the bag for a couple of hours and then fry it. You can also use the same thyme and garlic when you fry it in the pan. Then, just open the bag and add butter, and the venison is soon ready.
"Ideally, the smaller pieces are best for us, although it is more work for you."
Then the kitchen team laughs, saying, "Cooking is like his grandmother doing a Sunday roast!"
